    S’mores Toffee Bark

    S’mores bark is made from graham crackers are smothered in butter and brown sugar, then topped with chocolate and marshmallows for a easy-to-make and addictive treat!

    I’m going to go ahead and apologize now, because I’m about to ruin all other s’mores for you with this S’mores Toffee Bark. You’re forever going to want to smother your graham crackers with butter and brown sugar.

    The next time someone makes s’mores around a campfire and hands you chocolate and marshmallow sandwiched between two normal graham crackers, you’re going to feel a little sad. I’m sorry.

    People will fall in love with s’mores bark!

    My coworkers’ reactions were many different levels of joy:

    • “WHY DO YOU WORK HERE PLEASE GO OPEN A BAKERY”
    • “You need to be making sweet sh*t 24/7 and selling it at the Haasch Hut (okay… we can think of a better name for your chain of bakeries).”
    • “I was just going to taste a bit of the toffee that broke off a piece someone else took. And then I accidentally ate two whole pieces. Okay, three. FINE. FOUR. I’M SORRY.”

    This stuff is no joke. It’s sweet and addictive. Don’t say I didn’t warn you.

    How to make s’mores bark

    Firstly, you’ll preheat your oven to 350° F. Then you’ll want to fit your graham crackers on the baking sheet you’re using – I recommend lining it with parchment paper of a nonstick silicone mat.

    As you can see in the photos below, in a small 9″x13″ sheet pan I laid the graham cracker halves out 3×5 (7 ½ sheets), but on a larger pan they are 4×6 (12 sheets).

    The recipe is written for a 9″x13″ pan, so if you want to use a large pan I’d recommend doubling the recipe.

    • In a small saucepan over medium heat, combine butter and brown sugar and stir frequently. Remove from heat as soon as it comes to a boil, stir in vanilla extract, and then pour mixture over graham crackers on prepared baking sheet. Use a spatula to spread it as evenly as possible.
    • Place in oven to bake for 2-3 minutes.
    • Remove from oven and immediately cover with chocolate chips. Let it set for a few minutes to melt from the residual heat, and then carefully use a spatula to spread it evenly.

    • Top with marshmallows to cover the surface (you won’t be able to use a spatula to spread this layer). If desired, sprinkle chopped chocolate, chocolate chips, or chocolate bar pieces and crushed graham cracker pieces across the top.
    • Add pan back to the oven and turn the oven to broil – remove the pan once the tops of the marshmallows are golden brown (2-3 minutes).
    • Let cool, then place the completed bark in the fridge until it has set. Cut or break into pieces and serve.

    What are the best graham crackers to use?

    I usually have Honey Maid graham crackers on hand, but you could also use Nabisco, Annie’s, or whatever you’re able to grab.

    I’ve used honey flavored and cinnamon flavored graham crackers, and they’ve both been delicious.

    What kind of chocolate should I use?

    You can use whatever kind of chocolate you like best, but I always recommend a high quality chocolate (no offense, Hershey’s – I know you’re the OG s’mores chocolate choice).

    I prefer dark chocolate, but you could use semisweet or milk chocolate instead. Chopped chocolate bars melt easier than chocolate chips, but those will work as well!

    As long as you end up with a melted chocolate layer, you’re doing a-okay.

    How to store s’mores bark

    Store your cooled, set s’mores bark in an airtight container in the fridge to keep it from getting melty and sticky at room temperature.

    You’ll never want to eat s’mores the same way again! Graham crackers are smothered in butter and brown sugar, then topped with chocolate and marshmallows for a easy-to-make and addictive treat.

    Ingredients
      

    • 15 graham cracker sheet halves, for a 9×13" sheet (depends on the size of your baking sheet)
    • ½ cup light brown sugar, packed
    • ½ cup unsalted butter, melted
    • ¼ teaspoon pure vanilla extract
    • 8 ounces semisweet or dark chocolate chips, or chopped chocolate
    • 2 cups mini marshmallows, can substitute large marshmallows
    • 1 graham cracker half, crushed, optional for topping
    • chocolate pieces, optional for topping

    Instructions
     

    • Preheat oven to 350° F.
