Apple Pupcakes with Peanut Butter Frosting

This fabulous girl turned two last weekend! You can see it in her eyes… she's super excited to be a big girl now.

She's full grown (I hope, anyway) and knows all sorts of tricks. She's still insistent that she needs to have her leash in her mouth for at least 50% of each walk to ensure I'm doing it right.

She's still full of just as much energy as she had when she was 6 months old. She's still a Stage 5 clinger when it comes to napping.

She still loves everyone and everything she meets – even inanimate objects (pinecones, sticks and balls are basically the best things ever, in case you weren't aware). And she's still the happiest dog on the world on a daily basis.

So for my precious, gorgeous, ridiculous, notsolittle furbaby, I always have to make sure she has her very own birthday pupcakes. Last year I “set her food on fire” and she was extremely distressed over the whole ordeal. This year, she handled it like an adult: completely unimpressed and slightly annoyed at the delay in getting food in her belly.

The many stages of her emotions when receiving her birthday pupcakes is sort of hilarious. It goes like this:

  1. What's that? OHMYGODISTHATFOOD?!
  2. Super excited about food JUST FOR HER.
  3. Sheer joy with uncontrollable drool.
  4. Regaining some composure, but unable to wipe the smile off her face.
  5. Concerned at why I'm sticking a big hunk of colorful wax into her food.
  6. Remembering what happens after a big hunk of colorful wax is stuck in her food.
  7. Annoyed that I'm pulling this crap again.
  8. Relieved when the fire is gone and back to stage one.

Stage One:

Thankfully, she forgives me pretty much as soon as I blow out the candle for her (shut up, it's adorable) and then inhales her birthday treat with the appropriate gusto.

My choice for her this year was Apple Pupcakes with Peanut Butter “Frosting” topped with crumbled bacon. Her favorite foods are peanut butter, bacon, yogurt and pumpkin. This recipe uses three out of four, so I think she's okay with it.

Skip the muffin liners

I made mine in little muffin cups this time around, but I don't recommend it – they're a little tough to remove. Just grease your muffin tin with nonstick spray and everything will work out perfectly.

How many pupcakes does this recipe make?

This recipe makes 10-12 pupcakes, so I recommend making a big batch and sharing them with all your friends' furbabies to share the love!

Total Time: 30 minutes
Servings: 12 pupcakes

Ingredients
 

Instructions

  • Preheat oven to 350ยฐ F. Use nonstick spray to grease muffin tin and set aside.
  • Cook bacon in your preferred method, let cool and crumble. Set aside.
    2 strips bacon
  • In a large bowl, whisk together egg, water, milk, yogurt, applesauce and honey.
    1 egg
    1/2 cup (118 2/7 g) water
    1/4 cup (61 g) milk
    1/4 cup (61 ยผ g) plain yogurt
    2 tablespoons unsweetened natural apple sauce
    2 tablespoons honey
  • In a separate large bowl, whisk together flour and baking powder.
    2 cups (240 g) whole wheat flour
    1/2 tablespoon (ยฝ tablespoon) baking powder
  • Add dry ingredients to wet ingredients and stir to combine. Mixture will be thick.
  • Gentle fold in chopped apples and distribute evenly.
    1/2 cup (62 ยฝ g) apple
  • Use a large cookie scoop to fill prepared muffin tins. Bake for 30 minutes.
  • Remove from oven and let cool in pan for 5 minutes. Remove from tin and let cool complete on wire rack.
  • “Frost” with peanut butter and sprinkle crumbed bacon on top of each pupcake. Serve and let them enjoy!

    1. Only a couple days in the fridge – but you’ll want to store the frosting and “pupcakes” separately as they’ll get mushy if you store them “frosted”!
