It’s not a secret that I love baking. And because I love baking, November and December the best months of the year for me. I get to make bagillions of different recipes and blame it on attribute it to the holidays. My coworkers love/hate me during this time of year, because I am doing their diets absolutely no favors.
The problem I encounter, however, is that I want to make so many recipes, but don’t have anywhere near enough time for all of them. That’s the time when I start to cheat and use a boxed cake mix to supplement one, use premade pie crusts for another… I’m not proud of it, but it’s my reality.
There is one recipe that I always end up making when I’m in a pinch that barely makes it to the serving table: Rolo Pretzel Delights. It’s so simple and so quick it’s almost not even fair. Plus, they’re bite-sized which makes them the perfect holiday snack. You can fill a dish with these, place it on a coffee table at a party and watch people flock to them and suddenly, they’ve disappeared! It’s magic, I tell you.
The picture above is just after they’ve come out of the oven – you can see the Rolo starting to cave under the weight of the pecan. Just looking at that one is making my mouth water – the warm chocolate and caramel pairs perfectly with a salted pretzel. And the pecan? That’ll help you get some of your daily protein. If you’re allergic to nuts (or just don’t like them) just place another pretzel on top instead!
I love to use Snyder’s of Hanover Butter Snaps because their square shape is exactly the amount of real estate you need for the toppings.
You can make as many or as few of these as you’d like – although I recommend making a good amount because no one is going to stop at just one.
You can find the super simple recipe for Rolo Pretzel Delight’s on packages of Rolo’s or on Rolo’s site. I promise you – the hardest part is unwrapping each of the Rolo candy’s and not eating them all. Don’t say I didn’t warn you!
