Let's get right to the point: Bacon Wrapped Kielbasa. You heard me. Meat wrapped with more meat.

I was looking for some Sunday football snacks to make from stuff around the apartment and after Googling a few different things I came up with this recipe.

They're similar to bacon wrapped smokies, but we're using pieces of sliced kielbasa instead of little smokies.

Key Ingredients

  • Kielbasa
  • Bacon
  • Maple syrup
  • Spicy brown mustard
  • Chili powder
  • Toothpicks
  • A small bowl
  • A foil-lined baking sheet

I'm lucky enough to live in New England and to have formerly lived in Vermont, so I have a lot of real maple syrup on hand. It's SO much better than the store-bought crap. Seriously.

Take my word on this one. If I see you holding a woman-shaped bottle of that butter-flavored nonsense I'ma come smack it out of your hand.

How to make bacon wrapped kielbasa

  1. Preheat your oven to 350° F. Line a baking sheet with aluminum foil and set aside.
  2. Slice kielbasa into 1″ pieces and cut each strip of bacon in half. Keep in mind that you'll need half as many (whole) slices of bacon as you have kielbasa pieces, so take that into account when you're prepping since the amount you have may vary.
  3. In a small bowl, whisk together mustard, maple syrup and chili powder.
  4. Using a basting brush, coat both sides of each piece of bacon with your mustard glaze.
  5. Wrap each kielbasa slice with each strip of bacon and secure with a toothpick through the center. Place on prepared baking sheet standing on its end (or tilted on the edge of the toothpick if need be).
  6. Bake for 30-40 minutes, depending on how crispy you like your bacon.
  7. Let cool on the baking sheet for a few minutes, then move to a cooling rack to drain excess oil.

You can choose to place them nice and neat, side by side on a platter… or just pile them on top of each other on a plate for your guests to ravage. I'm a little partial to the latter.

I once brought these to a party and a vegan (you read that right – vegan) friend of mine couldn't stop talking about how good they smell.

She came this close to trying one, too. So close.

Variations

  • You could add a little brown sugar to the mustard glaze, either in place of the maple syrup or in addition to it.
  • If you want to turn these into pig shots instead, you'll add a cheese filling element – but to the top!
    • In a small bowl combine 2 ounces of cream cheese, 1/4 cup grated or shredded cheddar cheese, and 2 tablespoons sour cream.
    • Place the mixture in a piping bag or plastic bag.
    • After you've secured the bacon to the kielbasa with the toothpick, pipe a little bit of the cream cheese mixture to the top of each sausage, and then press a thinly sliced jalapeno on top. Bake as instructed.

  • 12 ounces kielbasa, fresh or smoked
  • 12 ounces bacon, thick cut recommended
  • ¼ cup spicy brown mustard
  • ¼ pure maple syrup
  • 2 teaspoons chili powder, more or less, to taste

Instructions

  2. I’ll be hosting a football party next weekend and I’ll be serving finger food in addition to chicken wings. I’m going to stock up on the ingredients this week and make these for the party! I know my friends love bacon as much as I do, too!

    If this doesn’t say game day food, I don’t know what would! I love kielbasa sausage! Never had it wrapped in bacon, but how in the world could that be bad?! Ha!

    Meat wrapped around meat! Why not!! I know this would be the hit of any party…and a “guy” pleaser for sure. The first appetizer to disappear off the party tray.

  7. Can I prepare bacon wrapped kielbasa ahead, refrigerate, and cook a couple of days later or prepare,cook first and freeze for later?

    1. I’ve actually never tried to do that, but I would imagine it would work fine! I’m not sure what temp or time you’d need to bake them at though. If you try it, let me know what you end up doing!
