Red Velvet Cake Mix Cookies (One Bowl, No Mixer!)

You can have red velvet cookies in 20 minutes with this easy recipe that only needs four ingredients and one bowl - no mixer or chilling required! We're using boxed cake mix for the easiest red velvet cookie recipe ever.

  • 15.25 ounce box Red Velvet cake mix
  • 2 large eggs, room temperature
  • ½ cup unsalted butter, melted and slightly cooled, can substitute vegetable oil
  • 1 teaspoon pure vanilla extract, or almond extract (optional)
  • 1 cup white chocolate chips*


  • Preheat oven to 350°F and prepare two baking sheets with nonstick silicone mats or parchment paper. Set aside.
  • In a large bowl, combine cake mix, eggs and butter (and vanilla, if adding) and use a wooden spoon to stir until just combined. Add the white chocolate chips and stir to combine them during your last few stirs to evenly distribute.
  • Using a medium cookie scoop (about 2 tablespoons), portion dough onto prepared baking sheets a few inches apart to allow them to spread - no more than 6 cookies per sheet.
    If desired, top with a few additional chocolate chips (for presentation's sake).
  • Bake for 9-11 minutes or until the cookies have set (but have not yet started to brown).
  • Allow to cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely. Enjoy!



*Optional add in: If you'd like to add macadamia nuts, add ¼ cup chopped nuts and reduce the amount of white chocolate chips to ¾ cup.
