Birthday cake popcorn is full of colorful sprinkles, salty popcorn, sweet white chocolate and cake batter flavors- 4 ingredients and 30 minutes are all you need for the perfect shareable snack!
½cupsprinklesnot nonpareil, as their colors bleed, plus some for topping
Instructions
Place wax or parchment paper on a baking sheet and set aside.
Pop popcorn in your preferred method and salt to taste. Pour into large bowl and set aside.
1/4 cup popcorn kernels
Melt white chocolate in your preferred method, stirring frequently until smooth and being careful not to overheat.
10 ounces white chocolate melts
Add half of the cake mix to the white chocolate and stir to combine.
3/4 cup funfetti or white cake mix
Immediately pour white chocolate mixture over the popcorn and use a spatula to combine. Add the rest of the cake mix and sprinkles and stir or toss again to combine until thoroughly coated.
1/2 cup sprinkles, 3/4 cup funfetti or white cake mix
Spread onto prepared baking sheet in a single layer and top with some extra sprinkles (just because). Let set for at least 15 minutes or until set and then break apart into small clusters. Serve and enjoy!

Popcorn: You can use lightly salted packaged microwave popcorn if you want (just make sure it's not the kind loaded with "movie theater butter flavor" or whatever it's called), but I prefer homemade. See tips in the post about making your own!Heat treating the flour in the cake mix: If you’re concerned about the potential for bacteria in raw flour, you can quickly heat treat it by spreading it out onto a baking sheet and toasting it at 350°F for 5 minutes. Let it cool, then follow the rest of the instructions. Just note that the sprinkles in the funfetti cake mix may discolor or become a bit melty and spread. But don’t despair – that’s just more reason to add even more sprinkles :)Storage: Store any leftover funfetti popcorn in an airtight container at room temperature for up to 2 days. Unfortunately it doesn't last that long - but honestly, it probably won't last long due to how delicious it is anyway ;)
