Any day can feel like a tropical vacation with these ridiculously easy, creamy, two-ingredient pineapple popsicles!
Prep Time 5 minutes
Cook Time 8 hours
Total Time 8 hours 5 minutes
Servings 6 popsicles

Ingredients

  • 1 whole pineapple, cut into chunks and frozen
  • 1-14 ounce can coconut milk, unsweetened or sweetened

Instructions

  • Place frozen pineapple and coconut milk in food processor (or blender, if yours is powerful enough) until smooth and thick.
  • Pour into popsicle molds and freeze until solid. Enjoy!

Notes

Coconut milk: You can use unsweetened or sweetened depending on your personal preference (and how sweet you find your pineapple to be).
Note: Depending on the size of your molds, you might have leftover pineapple mixture. If that's the case, stick it in the fridge and make a second batch!
