Place frozen pineapple and coconut milk in food processor (or blender, if yours is powerful enough) until smooth and thick.
1 whole pineapple, 1-14 ounce can coconut milk
Pour into popsicle molds and freeze until solid. Enjoy!

Coconut milk: You can use unsweetened or sweetened depending on your personal preference (and how sweet you find your pineapple to be).Note: Depending on the size of your molds, you might have leftover pineapple mixture. If that's the case, stick it in the fridge and make a second batch!
