Chocolate covered bacon is a sweet and salty snack that's sure to be a hit! Strips of salty bacon are dipped in chocolate, and can be candied before coating in your favorite chocolate.

Instructions
Cook bacon - oven method
Preheat oven to 400°F. Line one rimmed baking sheet with aluminum foil and place an oven-safe wire rack on top of the foil. Line a plate with paper towels, and line another baking sheet with parchment paper, and set both aside.
Place each coated bacon strip on the wire rack of your foil-lined baking sheet. Bake for 20 minutes until dark brown, firm and crisp. You may need additional time, as thicker slices will need longer to cook through.

When done baking, immediately use tongs to transfer each slice to your paper towel-lined plate to cool completely.
Cook bacon - air fryer method
Line a plate with paper towels, and line a baking sheet with parchment paper, and set aside.
Arrange your slices of bacon in a single layer in your air fryer basket. Depending on the size of your air fryer and how many slices you’re making, you may need to do this in multiple rounds. You can also cut each bacon slice with kitchen shears in half to make smaller strips.
Cook at 400°F for around 15 minutes until dark brown, firm and crisp. When done cooking, carefully use tongs to transfer each slice to your paper towel-lined plate to cool completely.
Melt chocolate
For dipping purposes, you may want to thin out the chocolate a bit. Add oil to chocolate in a microwave safe bowl and heat in microwave in 15 second intervals, stirring until completely melted and smooth. Transfer to a tall and deep glass to make it easier to dip the bacon.
1/8 cup melted coconut oil, 8 ounces dark chocolate
Dip each piece of bacon in the melted chocolate, and place bake on parchment lined baking sheet to set. If desired, decorate with maple sugar, toffee pieces, sprinkles, or additional chocolate drizzles.
If your house is cool enough, let them sit at room temperature to set. Otherwise you can expedite the process and place the sheet in the fridge and they should be set in about ten minutes. Serve and enjoy!

Note: I like to use two overlapping sheets of aluminum foil on a rimmed baking sheet for cooking the bacon to ensure the grease doesn't spill out.Bacon thickness: Thick-cut bacon slices will result in a more chewy result with crispy edges, while thinner slices will be more uniformly crisp (and better for crumbling).
