Veggie Lasagna Rollups

These tender vegetables, gooey cheese and perfectly seasoned sauce are so hearty you will forget you ever put meat in your lasagna!

Cook lasagna according to package directions and lay them out on parchment paper in a single layer until ready to use.

Toss onion, garlic, zucchini and carrots and mushrooms with olive oil and bake at 350°F for 25 minutes.

In a medium bowl, mozzarella, ricotta, and Parmesan cheeses with parsley, red pepper flakes, egg and spinach.

Spread an even layer of the cheese mixture onto each lasagna noodle.

Now add a layer of diced tomatoes.

Next, add a layer of roasted veggies.

Lastly, add a layer of tomato sauce - make sure to leave some sauce leftover, you’ll need it later!

Starting at one end, roll each noodle and place each roll seam side down into a baking dish prepped with a layer of tomato sauce.

Cover rolls with remaining tomato sauce and mozzarella cheese. Tent foil over dish and bake 25 minutes, remove foil then bake another 10 minutes.

Use a spatula to scoop out and serve each roll, and enjoy!
