I have a few minty recipes I like to make, but none of them were cheesecake. In my search (on Pinterest, of course) I came across the blog for Baked in the South with this recipe for “Thin Mint Cheesecake Bites” posted as an adaptation of a Martha Stewart recipe. Not only does Rhiannon (the blog owner) have a unique name, but she has a large collection of unique recipes as well. I highly recommend giving her site a look, but I’ll give you fair warning – you’re going to leave hungry. Hangry, even.
On a day leading up to St. Patty’s Day, I had a horrible craving for cheesecake and mint. It’s like my stomach knew the holiday was approaching, and was just trying to get one step ahead of me so I could get it out of my system.
These things are good. So good, in fact, that when I gave one to a coworker his response was “HOLY CRAP.” He also proceeded to make groaning sounds while he devoured it that made me really uncomfortable… but that’s beside the point.
It doesn’t need to be St. Patty’s Day for you to make these – in fact, I think they would be a perfect treat for Monday Night Football. Or a birthday party. Or a Tuesday.
