I’d like you all to meet my good friend and coworker, Val of The Slacker Gourmet (above, second from the right)! While she is constantly saying she’s “not much of a baker”, she makes delicious meals and snacks that you won’t have to spend the entire night preparing. And as her tagline says, “Delicious doesn’t have to be difficult”!
Recently she adopted the ways of gluten-free and dairy-free to accommodate some diet restrictions for her husband, so you may find yourself being healthier than you planned to be (gasp!). It’s easy enough to swap out gluten-free ingredients for others though – just do a quick search for conversion rates just in case they’re not a 1-for-1 swap.
Since I’ve experienced her stuff first hand, I can assure you it’s yummy and highly advise you take a stab at some of her recipes. How hard could it be when it’s made for a slacker like you?
