In case you hadn’t already picked up on this, I’m an ice cream fan. Fan? Maybe fanatic. Nah, that makes me sound like a crazy person. Let’s go with ice cream enthusiast.
But sometimes I don’t want ice cream (shocking, I know). Sometimes I want fruit. But not just fruit… I want an experience. I want to be eating something that will give me the illusion that I’ve been swept away to a tropical island, surrounded by palm trees and sand. Happy and relaxed, settled into a chair on the beach with the sun on my face. That’s a lot to ask of fruit, but I’ve found that it can be done.
Enter the easiest popsicle I’ve ever made: Pineapple Popsicles. All you need are two ingredients, a food processor or high powered blender, and popsicle molds. The hardest part about this recipe is the waiting. Lordy, the waiting. The first step is waiting for the pineapple chunks to freeze, and the last is waiting for the popsicles to freeze. This is when time travel would be extremely convenient. Can someone work on that and get back to me, please? I’ll owe you.
I make mine using these Zoku molds. They’re the perfect size for me, they have a drip guard, and cleaning them is super easy. To release the popsicles from the casing, I just have to run them under hot water for a few seconds and then it pops right out without any problem at all.
If you can cope with the waiting, these are so worth it. I promise you. They’re creamy and smooth, and it tastes like a tropical vacation. Seriously. That’s really the only way I can describe it. It brings me right back to my vacation last year on St. Croix, and there’s no reason you shouldn’t take a quick mental trip to the beach yourself. 2-Ingredient Pineapple Popsicles
Any day can feel like a tropical vacation with these ridiculously easy, creamy, two-ingredient popsicles!

- 1 whole pineapple, cut into chunks and frozen
- 1-14 oz can coconut milk
- Place frozen pineapple and coconut milk in food processor (or blender, if yours is powerful enough) until smooth and thick.
- Pour into popsicle molds and freeze until solid. Enjoy!
Note: Depending on the size of your molds, you might have leftover pineapple mixture. If that’s the case, stick it in the fridge and make a second batch!
